Maple Coconut Drop Cookies

Ingredients:

1/2 cup butter

1 cup maple syrup (Dark Robust preferred)

1 egg

1 teaspoon vanilla

2 cups all-purpose flour

Cream these ingredients together with a mixer.

Add these dry ingredients into a separate bowl and mix thoroughly:

1 1/2 cup all purpose flour

1 teaspoon salt

2 teaspoons baking powder

2 cups shredded unsweetened coconut

Directions:

Pre-heat the oven to 375°F. Add dry ingredients to wet mixture. Mix together and drop by teaspoon onto greased cookie sheets. Bake 10-12 minutes. Makes about 2 dozen cookies.
